Bake & Munch: Banana Maple Muffins

Classic flavor combo.

If you have overripe bananas and don't know what to do with it, why don't you turn them to muffins instead? These yummy ones are so easy to make and the end product is moist and delicious and oh so banana-y. Surprisingly, even with the addition of maple syrup, the muffins have just the right sweetness. They are perfect on their own or paired with a nice hot cup of tea or coffee. You can also experiment with this muffin base with add-ins, like nuts, choco or cinnamon chips and even sultanas.

Love having these as a snack or for breakfast. You can make it even more sinful by topping it with a scoop of ice cream plus a drizzle of maple syrup ala mode. Yum!

BANANA MAPLE MUFFINS

Yield: 12

2 cups all purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1 1/4 cup mashed banana*
3 tbsp butter**
1/4 cup granulated sugar
1 large egg
1/2 cup maple syrup
1/2 tsp vanilla extract

-preheat oven to 375F

-in a bowl, whisk together flour, baking soda and powder, and salt

-in a separate bowl, cream butter and sugar, followed by egg, maple syrup, and vanilla extract. Add in mashed bananas last.

-add flour mixture to banana mixture, stir until flour mixture is completely mixed in

-pour batter into a lined 12-cup muffin pan.

-bake for 16-19 minutes, or until an inserted toothpick comes out clean.

-cool muffins before consuming or storing into an airtight container

*you can also make it 1 1/2 c mashed banana to enhance the banana flavor
**butter I used is salted.
