No Meat Mondays: Garlic & Basil Chickpea Patties

Hefty patties.

Back again with yet another chickpea burger recipe. What can I say, I just love making them. I shared a recipe for simple chickpea burgers back in December so now I thought I'd share another one that's as tasty but, I'd say, more hefty.


As you can see by the title, these patties are big in garlic and basil flavors. I love me some really garlicky burgers and the addition of fresh basil leaves adds to the freshness of the patties. The three spices (cumin, cayenne, and turmeric) add another dimension to the patties as well, adding earthy tones and a good heat, as well as color. For some more flavor, diced up onions and bell peppers really do the trick. With the chickpeas, the patties just taste like damn good veggie patties you can pair up with any carbs like bread, rice, or couscous.

One thing that makes these patties different from the simple chickpea burgers is the addition of breadcrumbs. I think the breadcrumbs are the reason why these patties are well bulked. You can call it just adding extra carbs but they do make a whole lotta difference. Hey, you can always opt for lettuce wraps than buns, just saying.

These patties are high in protein (from the egg and chickpeas, with maybe the addition of a slice of cheese if that's your jam) than the simple chickpea burgers so you can definitely opt for this if you want something that will fill you up longer. You can also turn these into balls instead of patties and put them in wraps ala falafel. Just remember: go big on the garlic, basil leaves, and salt + pepper.

GARLIC & BASIL CHICKPEA PATTIES

YIELD: 2 thick patties or 3 medium patties

PATTIES:
1 can (225g) chickpeas, drained, rinsed, skins removed
3-4 cloves garlic
8 fresh basil leaves, chopped
1 tbsp lemon or calamansi juice
1/2 tsp ground cumin
1/8 tsp ground cayenne
1/8 tsp ground turmeric
1/2 - 3/4 tsp salt
generous pinch of pepper
1 egg, slightly beaten
1 small red onion, diced
1/2 red bell pepper, diced
1/3 - 1/2 c panko breadcrumbs

1. In a food processor, combine the first 9 ingredients and pulse until coarsely chopped.

2. Transfer mixture into a bowl and fold in egg, onions, bell peppers, and breadcrumbs, starting with 1/3 cup. 

3. Mold mixture into patties and add in remaining breadcrumbs if patties are too wet and soft.

4. Place patties on a lined tray. Let rest for 20 - 30 minutes.

5. Fry patties in a pan until golden brown.

6. Pair with carbs and condiments of choice.
