No Meat Mondays: Simple Chickpea Burgers

Easy and tasty.


I’ve come across a ton of veggie burgers online. Like, you wouldn’t believe the number of burger recipes I’ve gone through. There are those that are very high in protein, burgers that combine 2-3 kinds of beans in the patties, ones that contain a lot of vegan superfoods I don’t have in my pantry, ones that are expensive to make, and my favorite, the ones that are easy and quick to make with ingredients that don’t cost an arm and a leg. They get a big round of applause from me for being lifesavers.

Now, this veggie burger recipe is one I consider as one that’s entry-level & foolproof. It doesn’t require a lot of ingredients (and ones that are hard to find), doesn’t take a lot of time to make, and the recipe can easily be doubled or tripled. You will need a food processor or a blender for the patties (you can make it by hand but it won’t produce a smooth and uniform finish), nicely toasted buns, burger toppings of choice, and a moment of silence for how delish these are. Just writing this post is making me hungry already!

I figured since today’s the last day of 2018, I might as well post something special and something you can easily make before the new year rings (or anytime you crave for a veggie burger, really). I enjoyed posting NMM posts every week for this month so who knows when I’ll next do it, eh? But after this, we’re back to regular programming, with alternating Bake & Munch recipes every Sunday and NMM on Mondays. See you in 2019! Woohoo!


SIMPLE CHICKPEA BURGERS

YIELD: 2 patties/burgers

Patties:
1/2 red onion, finely chopped
2-3 cloves garlic, crushed
1 small can (225g) chickpeas, drained, skinned, and rinsed
1/4 tsp paprika
1/4 tsp ground cumin
1/4 tsp ground coriander
2 tbsp chopped fresh cilantro
1 1/2 tsp flour, plus more for rolling

Other ingredients:
1 - 2 tbsp oil, for frying
burger buns / bread of choice
burger toppings of choice
veggies of choice (I used cucumber and tomatoes)


1. Prep the patties: in a blender or food processor, combine all ingredients. Blend/pulse until everything is combined, no big pieces, and dough looks like ground meat patty. It shouldn't be too sticky or loose.

2. Scoop out the burger blend and place onto a floured surface. Divide to two patties and flatten to desired thickness. Do not overflour the patties, put just enough so it won't be too stick to your hands or on any surface.

3. Let patties chill for a bit in the fridge, about 10-15 minutes to let the flavors marry. You can also store it in the freezer for another day.

4. When ready to cook, take patties out of the fridge and fry on medium heat. 

5. Toast some buns and prep your veggies and condiments.

6. Assemble your burger to you heart's desire. Best served hot and with you side of choice (chips, fries, salad, etc)
