Bake & Munch: Chocolate Chip Cookie Dough Bars
Cookie dough all day, everyday.
We're about to say goodbye to 2018 very soon...wait, what? I feel like 2018 went by so fast. Sure, there were months that felt like forever but here we are, almost at the end of the year. Hope you're all great and recovering from the holiday rush. Perhaps a sweet pick-me-upper can help right about now. Something sweet, comforting, and familiar...a chocolate chip cookie dough bar, perhaps?
Yep, you read that right. It’s a choco chip cookie in bar form because I’m just the laziest when it comes to baking cookies and making them in bars just makes my heart flutter. Who wouldn’t want a thick choco chip cookie bar? It’s just the perfect sweet fix to munch on anytime, anywhere. Best part is you can totally share this with friends and family. As much as it is tempting to hog all the bars to yourself, I don’t think it’s wise to consume all that sugar, no?
I think the three most important ingredients in this recipe are: vanilla, chocolate chips, and butter. Without these three, it won’t be a full bodied chocolate chip cookie in full force. You need that fat from the butter, that fragrance and flavor from the vanilla, and that special oomph from the chocolate chips.These bars are more on the chewy side so in a way, it feels like you’re munching on a less mushy, more structured cookie dough. Ugh, so good.
As I’ve said, these bars are best cut in either squares or small bars, it really depends on you. As you can see from the photo above, you can cut them in small bars or in hefty squares. They’re fridge-friendly so all you need to do is store them in an air-tight container and you’re pretty much set. They make good gifts and trust me, these are a hit for pretty much anyone: chocoholics, cookie lovers, kids, and kids at heart.
PS. Best served with a glass of milk…. Or a scoop of vanilla ice cream!
CHOCOLATE CHIP COOKIE DOUGH BARS

YIELD: 16 squares or 32 small bars
1/4 c + 2 tbsp butter, room temp (I used butter compound)
1/4 c + 2 tbsp brown sugar, slightly packed
2 tbsp granulated sugar
1 large egg, room temp
1 - 1 1/2 tsp vanilla extract
1 c all purpose flour
1 tsp cornstarch
1/2 tsp baking soda
1/4 tsp salt (make to 1/8 tsp if using salted butter)
1 c + 2 tbsp mini semi-sweet chocolate chips
1. Preheat your oven to 350F. Prepare an 8x8" square pan by lining it with parchment paper.
2. Combine flour, cornstarch, baking soda, and salt in a bowl. Set aside.
3. In another bowl, cream together butter and sugars until light and fluffy.
4. Add in egg and vanilla and beat until just combined.
5. Add in flour mix to butter-egg mixture and beat until just combined.
6. By hand, fold in chocolate chips.
7. Transfer batter into prepared pan. Spread and smooth the batter for even baking.
8. Bake for 20 - 25 mins or until a toothpick inserted into the center comes out clean.
9. Let completely cool before cutting into bars or squares.
