No Meat Mondays: Spicy Chickpea Scramble Sandwich

Back with another easy peasy sandwich recipe! Yes, it's another chickpea recipe, but no, it's not in patty form.

In today's sandwich, our chickpeas will stay in its original form: whole, well, whole-ish. I know it's so common to make chickpeas into patties but leaving them as is and stuffing them between two bread slices isn't so bad either. Yes, it can be a mess to eat them whole since they have the tendency to roll around but trust me, the mess is worth it. The last whole chickpea sandwich I did was coated with curry mayo but for those who aren't keen on mayo, today's recipe is for you. This will be great for meal preps, will go well with grains or breads, and won't go bad easily. All you gotta do is mix in spices and a couple of herbs, chuck in some veggies, saute- easy peasy, like most NMM recipe here in my blog.

I like recipes that don't take ages to cook and this doesn't disappoint. The spice mix really elevates the chickpeas, give them that extra flavor boost they need. The onions and the bell peppers add in extra crunch and flavor and they bring everything together. I like that the spice mix has some added herbs there, too. They add an extra depth of flavor and aroma to the filling. I like this most on toasted bread (you're choice- white bread, whole grain, mini baguette) but I think this will also be really good as a wrap. I decided to just pair it with cucumber slices but this will be great with lettuce and tomatoes as well. This one is flavorful on its own but feel free to douse it with some yogurt to cut through the spice.

Now listen- I love me some spicy sandwich filling. This isn't called spicy for no reason but that's not your cup of tea, feel free to adjust. Adjust the spices, the herbs, the veggies- totally customizable. You can totally cook this up beforehand and store in the fridge or make this for a quick lunch or light dinner. This heats up well so you'll have a tasty lunch or dinner in no time. Again, if you're not a big fan of fillings with mayo, try this one out. Enjoy! xx


SPICY CHICKPEA SCRAMBLE SANDWICH

Yield: 2

Spice mix:
1/4 tsp ground coriander
1/4 tsp cumin
1/8 tsp onion powder
1/4 tsp garlic powder
1/8 tsp cayenne
1/8 tsp black pepper
1/4 tsp dried thyme
1/8 tsp paprika

Scramble:
1 tsp oil
1 225g can of chickpeas, drained and rinsed (option to remove skins)
1/2 red bell pepper, cubed
1/2 red onion, chopped 
1/8 - 1/4 tsp salt

bread of choice, toasted
veggies of choice: lettuce, cucumber, tomatoes, arugula, etc.
yogurt or hummus or mayo (optional)

1. In a bowl, combine all ingredients of spice mix. Mix together and toss in chickpeas. Stir untill chickpeas are all covered. Let sit.

2. In a pan, heat up oil and saute onions and bell peppers. 

3. Add in chickpeas + spice mix and salt. Stir. Add in water if needed.

4. While cooking, stir and slightly mash some chickpeas. You should have a mix of whole and mashed chickpeas.

5. Serve on top of toasted bread, veggies, and spread of choice (if using).
