Bake & Munch: Red Wine Brownies

Boozy bites.

Happy Sunday! It's been a long while since I posted a baked good recipe here in the blog so I thought I'd share one today.


Today's recipe is a good ole brownie recipe, just boozed up. I don't drink any alcohol anymore but I do like incorporating it in baked goods because they make anything a party party! I particularly like pairing it with chocolate. Boozy chocolate desserts are the best because they're just so decadent and sinful and just oh-so-chocolatey. I thought I'd share a red wine brownie recipe because I feel like wines are overflowing this month so if you're not in the mood to drink them all, this is a good way to use them. This is also for those who are like me who don't drink alcohol but don't mind sneaking it in in a dessert- I got cha!

The secret to tasty red wine brownies is the red wine itself. Bake with a red wine that you like to drink! Don't put in a wine that you don't like or you'll end up hating your batch of brownies. Also, this recipe of mine isn't too sweet (parents aren't too keen on anything too sweet) so if you feel like my sugars/sweeteners aren't enough, feel free to add in a couple of tablespoons or more. 

These brownies are perfect as dessert or even as gifts! They store pretty well in a cool place and I recommend serving or eating them straight outta the fridge. Let's get baking!



RED WINE BROWNIES
Yield: 16 squares


2/3 c all purpose flour
3/4 c baking cocoa powder
1/4 tsp baking powder
1/4 tsp salt
1/2 c unsalted butter, melted
2/3 c granulated sugar
2 eggs, room temperature
2 tbsp red wine (I used Cabernet Sauvignon)
1 tsp vanilla extract
1/2 c chopped walnuts
2 tbsp mini or regular semi-sweet chocolate chips



1. Preheat oven to 350F

2. Line an 8" square pan with parchment paper. Set aside.

3. In  a bowl, combine flour, cocoa powder, baking powder, and salt. Stir to combine and set aside.

4. In another bowl, cream butter and sugar until light and fluffy. Add in eggs, wine, and vanilla. Mix until just combined.

5. Add in flour-cocoa mixture into butter mixture. Mix well until combined.

6. Fold in walnuts and chocolate chips.

7. Transfer batter onto prepared pan and bake for  25-28 minutes, or until a toothpick inserted into the center comes out clean. DO NOT OVERBAKE.

8. Let brownies cool completely before putting inside the fridge to fully cool and set.




RED WINE GLAZE

4 tbsp unsalted butter
4 tbsp semi-sweet chocolate chips
3-4 tbsp granulated sugar
3-4 tbsp red wine


1. In a pan, melt butter over medium heat.

2. Once butter is melted, reduce heat and add in chocolate chips, sugar, and wine. Stir until sugar dissolves, chocolate chips melt, and mixture becomes smooth and silky. Don't let mixture boil.

3. Top the cooled brownies with hot glaze and let everything cool and set inside the fridge for at least 2 hours before cutting to squares. Enjoy!
